India is a land of varied tastes and flavours. Food takes a different twiste in every region.

Everybody and region have their own way and method of preparation. Going towards west to Maharashtra, the most popular anytime breakfast or we can say comfort food is POHA(flattened rice) made with rice.

Nobody is unaware of the taste and the healthy benefits it carries. Filled with fibre, little bit of fat, protein, and above all taste. Simple to make, quick and can be prepared at any point of time, and is light on the stomach.

                         POHA

Ingredients

Poha                                         1cup
Groundnut(shingdana).         2tbs
Green chillies.                         2
Mustard seeds.                       1 teaspoon
Curry leaves.                            7 to 10
Turmeric.                                  1teaspoon
Sugar.                                        A pinch
Coriander, finely chopped
onions and sev for
garnishing,
Lemon.                                      1/2
Salt to taste

Preparation:

Soak the poha for 5 minutes,a special poha is available in the market.

Cut the onions into slices

In a kadhai put a tablespoon of oil

Put groundnuts allow them to cook on medium flame for a minute

Add mustard seeds, onions, greenchillies(slit), curry leaves, turmeric and a pinch of sugar and roast till onions slightly changes the colour add a pinch of sugar, and salt to taste mix well

Add poha, give a nice mix till the poha mixes with all the spices and turn yellow, turn off the stove.

Finally squeeze half a lemon and took it in a plate. Garnish with fresh coriander, finely chopped onions and nylon sev . Serve piping hot.
